Brown Rice with Mushrooms and Peas
3 tablespoons butter
450g fresh sliced mushrooms
1 cup frozen peas
1 cup brown rice
3 cups beef/chicken broth
1 teaspoon salt
1/8 teaspoon pepper
1. Melt butter in a heavy bottom saucepan over medium heat
2. Sauté mushrooms until golden.
3. Add remaining ingredients; cover and bring to a boil.
4. Reduce heat and simmer until rice is tender.
