Spinach Rice Balls
2 cups cooked rice
350g frozen spinach, chopped and drained
2 tbsps parsley
2 tbsps milk
¾ cup Parmesan cheese
2 eggs, beaten lightly
1 envelope vegetable soup mix
3 tbsps flour
1/4 cup bread crumbs
Salt and pepper to taste
Cooking oil
1. In a large bowl, combine rice, spinach, Parmesan cheese, eggs, milk, flour, bread crumbs, salt, pepper, parsley and soup mix.
2. Heat oil in a pan.
3. Drop spoonful sized balls into hot oil.
4. Fry each ball until golden.
5. Serve warm.
