Summer Rice Salad
2 cups cooked rice
10 cherry tomatoes
4 green onions, chopped thinly
3 hard boiled eggs, each cut in four
200g cooked ham, diced
1 granny smith apple, seeds removed and chopped
2 medium sized potatoes, cooked and cut in cubes
50g cheddar cheese, cut in cubes
½ cup mayonnaise
Salt and pepper to taste
1. Mix all ingredients in a large bowl.
2. Refrigerate and serve chilled.
