Black Rice Pudding
1 cup black rice
3 cups water
1/3 cup brown sugar
1 ½ cups coconut milk
½ cup coconut milk for serving
Pinch of salt
1. Pour rice, water and salt in a heavy saucepan.
2. Bring to a boil then reduce heat. Simmer and cover with a lid for 40 minutes or until rice is cooked (the rice should still be wet).
3. Stir in sugar and coconut milk. Simmer uncovered, while stirring occasionally, until mixture is thick.
4. Serve warm with coconut milk on top.
