Chocolate Rice Pudding
500ml milk
2 cups long grain rice, uncooked
1½ cup water
½ cup sugar
½ cup dark chocolate, melted
1 tsp vanilla extract
1. In a medium saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. In a large saucepan, combined cooked rice, milk, chocolate and sugar in a large sauce pan.
3. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir occasionally.
4. Remove from heat and stir in vanilla.
5. Spoon into dishes. Serve cold.
