Bacon and Green Pepper Fried Rice
300g bacon, cut into 1cm squares
2 eggs, beaten
1 green pepper, seeded and chopped
2 cups rice, cooked and cold
2 tbsps light soy sauce
Cooking oil
Salt and pepper to taste
1. Heat oil over medium heat in a pan.
2. Fry bacon until crisp then drain on paper towels. Set aside.
3. In the same pan, add eggs. Stir until firm. Remove from pan and set aside.
4. Add in green pepper and stir until they are cooked. Stir in rice, bacon and eggs.
5. Add in soy sauce, salt and pepper. Cook for another 2 minutes while stirring constantly.
6. Remove from heat. Serve warm.
Fried Rice with Sausages
3 eggs, lightly beaten
6 sausages, sliced into 0.5 cm length
4 cups cooked rice
1 cup mixed vegetables
2 tbsp cooking oil
Salt and pepper to taste
1. Heat oil in a wok over medium fire
2. Add eggs and stir fry
3. Add sausages and stir fry for another 1 minute
4. Add rest of ingredients and stir fry for 3 minutes or until mixed vegetables are cooked through
5. Season with salt and pepper
6. Serve hot or at room temperature
