Barbecued Pork Fried Rice
100g barbecued pork, diced
100g shrimps, deveined and unshelled
2 cups cooked overnight rice
2 eggs
1 red onion, thinly sliced
2 spring onions, chopped finely
5 tbsps cooking oil
2 tbsps light soya sauce
Pepper to taste
1. Heat 3 tbsps cooking oil over medium heat in a large wok.
2. Add in onion and shrimps. Fry until light brown, stirring constantly.
3. Stir in rice and light soya sauce for a couple of minutes.
4. Spread rice and other ingredients around wok to create an empty space in the centre.
5. Add remaining cooking oil and crack in eggs. Scramble and mix them thoroughly with other ingredients.
6. Add pepper and continue stirring for another minute.
7. Remove from heat and garnish with spring onions.
Fried Rice with Sausages
3 eggs, lightly beaten
6 sausages, sliced into 0.5 cm length
4 cups cooked rice
1 cup mixed vegetables
2 tbsp cooking oil
Salt and pepper to taste
1. Heat oil in a wok over medium fire
2. Add eggs and stir fry
3. Add sausages and stir fry for another 1 minute
4. Add rest of ingredients and stir fry for 3 minutes or until mixed vegetables are cooked through
5. Season with salt and pepper
6. Serve hot or at room temperature
