Vegetable Fried Rice
3 cups cooked, cold white rice
1 red onion, diced
½ tsp ginger, minced
1 small can corn
1 small can peas
½ yellow bell pepper, cored, seeded and chopped
½ red bell pepper, cored, seeded and chopped
1 tbsp dark soy sauce
1 tbsp light soy sauce
2 tbsps oyster sauce
Salt and black pepper to taste
1. Heat oil in a wok over medium heat.
2. Stir in ginger and onion until aromatic.
3. Add yellow and red bell peppers. Stir fry for a minute.
4. Add corn and peas. Stir fry for few seconds.
5. Add rice. Mix well.
6. Stir in sauces, salt and black pepper. Cook for another 2 minutes while mixing all the ingredients together.
7. Serve warm.
Fried Rice with Sausages
3 eggs, lightly beaten
6 sausages, sliced into 0.5 cm length
4 cups cooked rice
1 cup mixed vegetables
2 tbsp cooking oil
Salt and pepper to taste
1. Heat oil in a wok over medium fire
2. Add eggs and stir fry
3. Add sausages and stir fry for another 1 minute
4. Add rest of ingredients and stir fry for 3 minutes or until mixed vegetables are cooked through
5. Season with salt and pepper
6. Serve hot or at room temperature
