Arroz a la Mexicana
1 cup medium grain rice
3 cloves garlic
1 yellow onion, chopped
4 tomatoes, peeled, seeded and chopped
1½ cup chicken broth
2 tbsp vegetable oil
Salt and black pepper to taste
1. Heat vegetable oil in a deep saucepan over medium heat.
2. Add garlic and onion. Sauté for few seconds.
3. Add rice. Stir for few minutes.
4. Stir in tomatoes, chicken stock, salt and black pepper.
5. Bring to a boil then reduce heat low.
6. Cover and simmer until rice is cooked.
7. Serve warm.
