Classic Paella (Spanish)
5 tbsp olive oil
10 mussels
10 uncooked shrimps
4 chicken drumsticks
2 cups rice
3 cups chicken broth
¼ cup peas
1 tsp minced garlic
1 large onion, chopped finely
1 medium tomato, skinned, seeded and cut into cubes
3 small red bell peppers, seeded and cut into thin strips
Salt and pepper to taste
½ tsp paprika
¼ tsp dried rosemary
¼ tsp dried thyme
¼ tsp ground cumin
¼ tsp saffron
1. Heat oil in a skillet. Mix in onions, garlic, tomato and bell pepper for a minute.
2. Add chicken and cook until browned on all sides. Season with salt, pepper, paprika, rosemary, thyme and cumin.
3. Stir in rice. Pour in chicken broth and combine well.
4. Sprinkle in saffron and continue to stir until well mixed.
5. Mix in mussels, shrimps and peas and cook for around 25 minutes or until all liquid has been absorbed.
