Chinese Fried Koey Teow (Fried Rice Noodles)
500g koey teow
2 tbsp pork fat
15 peeled prawns
50g cockles
2 cups bean sprouts
½ tsp sugar
2 cloves garlic, minced
1 egg
3 tbsp light soy sauce
2 tbsp oyster sauce
1 tbsp fish sauce
Salt and pepper to taste
1. Heat pork fat in a wok over medium heat.
2. Add garlic and sugar, stir fry until fragrant.
3. Add egg, scramble until egg is cooked.
4. Stir in sauces.
5. Add noodles, prawns and cockles and stir until the seafood is cooked.
6. Add bean sprouts, mix well and serve immediately.
