Glutinous rice with minced meat
Ingredients for glutinous rice
700g glutinous rice, washed, soaked overnight and drained
1 tsp salt
350ml thick coconut milk
5 pandan leaves, tied into a knot
Ingredients for meat, mixed
500g minced beef or pork
3 tbsp meat curry powder
1 tsp salt
½ tsp sugar
100ml thin coconut milk
Grounded ingredients
5 cloves garlic
2cm ginger
2cm galangal
3 stalks lemongrass
2 onions
1. Steam rice with coconut milk and pandan leaves in a rice cooker. Discard pandan leaves once rice is cooked.
2. Heat oil in a wok. Fry pounded ingredients mixture over medium heat until aromatic.
3. Add in meat mixture. Cooked covered until meat is tendered.
4. Serve hot with glutinous rice.
