Rice Beef Consommé
2 cups of beef consommé
1 cup of rice
2 tbsps butter
1 can sliced mushroomsshopping list
Beef Consommé:
1 tsp black peppercorns, crushed
1 egg white
1 tomato
1 onion, peeled and chopped
1 celery branch, chopped
1 carrot, peeled and chopped
2 cups beef stock
200g ground beef
Salt
1. In a food processor, blend together tomato, celery, carrot, onion and ground beef.
2. Whisk peppercorns and egg whites. Set aside.
3. In a large pot, stir in vegetable beef mixture, beef stock, eggs mixture and salt. Bring to a boil stirring constantly.
4. Reduce heat and simmer without stirring for another ½ hour.
5. Remove from heat and strain through a sieve. Keep aside.
6. Preheat oven at 180˚C.
7. Melt butter in a large pot over medium heat.
8. Pour in rice, consommé and mushrooms.
9. Cover and simmer for 40 minutes or until rice is cooked and most liquid has been absorbed.
