Rice soup with beef patties
For beef patties:
500g ground beef
2 tbsps butter
1 large onion, chopped
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
1/2 cup dry bread crumbs
1 egg, beaten
2 large tomatoes, chopped
2 garlic cloves, chopped
2 cups long grain rice
2 cups beef broth
2 branches celery, diced
2 large carrots, sliced
Salt and pepper to taste
1. In a large bowl, mix thoroughly beef with curry powder, thyme, egg and bread crumbs.
2. Melt butter in a skillet over medium heat.
3. Sauté onion until soft and translucent then removes from heat.
4. Add onion to the beef mixture. Mix well.
5. Shape beef mixture into small patties and refrigerate for 30 minutes to allow them to firm up slightly.
6. Heat some oil over medium heat in a griddle pan.
7. Season the patties generously with salt and pepper, and cook them for 10 minutes, turning them carefully every minute or so. Make sure they don't break up as you turn them.
8. In a large saucepan add the tomatoes, garlic, rice, beef broth, celery and carrots. Bring to a boil.
9. Reduce heat and cover simmer for 30 minutes, stirring occasionally. Season with salt and pepper.
10. Stir in beef patties.
11. Serve hot.
