Sweet and Sour Chicken and Rice
Ingredients for chicken:
600g chicken breasts and things, boneless, skinless and chopped in cubes
¼ tsp garlic powder
¼ tsp paprika
¼ cayenne peppers
Salt and pepper to taste
Ingredients for rice:
1 cup short grain rice
2 cups chicken broth
Ingredients for sweet and sour sauce:
1 ripe pineapple, cut into small pieces
1 cup sugar
2 tbsps corn starch (mixed with ½ cup water)
100ml rice vinegar
4 tbsps light soy sauce
Direction for rice:
1. Rinse rice until water is clear and not cloudy.
2. Mix rice and chicken broth in a rice pot.
3. Place pot into rice cooker.
4. Once cooked, allow rice to rest for 10-15 minutes before fluffing it up.
Direction for chicken:
1. Marinade chicken with garlic powder, paprika, cayenne peppers, salt and pepper. Set aside for 20 minutes.
2. Combine pineapple, sugar, rice vinegar and soy sauce in a saucepan over medium heat, stirring constantly.
3. Bring to a boil. When boiling, pour in cornstarch mixture. Continue stirring until consistency in thick. Set aside.
4. Heat 2 tbsps cooking oil in a large pan.
5. Stir fry chicken cubes until golden brown.
6. Stir chicken and sauce together thoroughly.
7. Serve hot with rice.
