Fish Jambalaya
2 yellow onions, chopped
1 green pepper, seeded and chopped
1 celery stick, thickly sliced
1 can chopped tomatoes
2 cups chicken broth
1 cup long grain rice
500g dory fish, cut in cubes
2 tbsps cooking oil
Chopped fresh parsley to garnish
1. Heat oil in a large sauce pan over medium heat.
2. Add onions. Stir until golden.
3. Stir in green pepper and celery. Cook for another 2 minutes or until soft.
4. Add rice and stir for few minutes to toast it.
5. Add chicken broth, tomatoes. Reduce heat, cover and simmer for 10 minutes.
6. Add fish and simmer until most of liquid has been absorbed.
7. Serve hot with sprinkled parsley.
