Salmon Rice Balls
150g cooked, cold white rice
2 tins salmon, drained and flaked
1 cup frozen mixed vegetables, thawed and boiled
2 eggs
3 tbsps flour
Breadcrumbs
Salt and pepper to taste
Cooking oil
1. In a large bowl, combine salmon, mixed vegetables, rice, eggs, flour, bread crumbs, salt and pepper.
2. Heat oil in a pan.
3. Drop spoonful sized balls into hot oil.
4. Fry each ball until golden.
5. Serve warm.
