Three-Cheese Rice Balls
1½ uncooked long grain rice
4 cups vegetable stock
1 cup crumbled feta cheese
1 cup grated cheddar cheese
1½ cup grated parmesan cheese
4 tbsps finely chopped parsley
1 cup flour
½ cup milk
1½ cup breadcrumbs
4 egg yolks
Vegetable oil for deep frying
1. Simmer rice with vegetable stock until rice is cooked. Allow to cool.
2. Mix rice with feta, cheddar, parmesan and parsley.
3. Take rice mixture and form 20 small balls.
4. Roll each ball first in milk, then flour, following with eggs and finally breadcrumbs.
5. Deep fry each ball until golden brown.
