Vanilla Rice Fritters
1 cup soft cooked rice
1 cup all purpose flour
2 tsps baking powder
2 tsps vanilla extract
½ tsp ground cinnamon
3 tbsps castor sugar
2 eggs
2/3 cup milk
Oil for deep frying
1. Sift flour and baking powder in a bowl.
2. Whisk eggs, vanilla, cinnamon, sugar and milk together. Stir in flour mixture.
3. Add rice. Mix well.
4. Heat oil in a large saucepan.
5. Drop spoonful sized balls into hot oil.
6. Fry each ball until golden.
7. Drain and serve warm.
