Easy Brown Rice Salad
2 cups cooked brown rice
2 red onions, finely minced
1 bunch fresh parsley, leaves only, chopped
1½ cups grape tomatoes, halved
1 cup black olives, sliced
1 tbsp olive oil
3 tbsps wine vinegar
1 tsp brown sugar
Salt and pepper
1. Whisk oil, wine vinegar, brown sugar, salt and pepper. Set aside.
2. Combine rice, black olives, tomatoes, onion and parsley in a large bowl.
3. Stir in oil combination. Refrigerate and serve cold.
