Lemon Basmati Rice
1 cup basmati rice
2 cups vegetable broth
1/3 cup lemon juice
Zest of 1 lemon
2 tbsps olive oil
¼ tsp ground pepper
½ tsp salt
1. Pour vegetable broth and rice to a large heavy bottom pan.
2. Cover the rice and simmer at low heat for about 15 minutes or until rice is cooked.
3. Add olive oil, salt, ground pepper, lemon juice and zest. Mix well, to ensure that all ingredients are well combined.
