Tomato Rice
1 cup rice
2 tomato cans
1 onion, chopped
2 cloves garlic, minced
2 red bell peppers, chopped
½ cup vegetable broth
2 tbsp oil
Salt and pepper to taste
1. Heat oil in a large saucepan over medium heat.
2. Stir in garlic, onion and red bell peppers.
3. Add rice and stir for few minutes to toast it.
4. Stir in tomatoes and broth. Cover and cook over low heat until liquid has been absorbed.
