Spice Rice Pilaf
1 cup long grain rice
2 cups vegetable broth
¼ tsp coriander
¼ tsp cinnamon
¼ tsp cumin
¼ tsp black pepper
¼ tsp salt
½ tsp paprika
½ tsp cayenne pepper
1 chopped onion
50g golden raisins
50 g toasted almonds
1 tbsp olive oil
1. Heat oil in a medium saucepan.
2. Add onion and cook until fragrant.
3. Stir in rice, coriander, cinnamon, cumin, black pepper, salt, paprika and cayenne pepper until rice is golden.
4. Add vegetable broth. Bring to a boil. Cover and simmer over low heat until the rice is cooked.
5. Remove from heat and let it cool for few minutes.
6. Stir in toasted almonds and golden raisins.
